pipewire: provide a way to select the default sound device

Description

Currently there is no way to select which sound device is the default input/output. My plan for HH is to write a tool that will allow the user to select.

Wireplumber was updated today and supports configuring devices.

See /etc/wireplumber/wireplumber.conf on the target.

On my UP^2, I'm not getting sound with the onboard soundcard that goes to the HDMI; I have to guess it's picked the wrong device, so it'd definitely be good to be able to over-ride the default.

Having it changeable via a config file would be useful now IMO, even if the location will change post-HH.

As of https://gerrit.automotivelinux.org/gerrit/c/AGL/meta-agl-devel/+/21748 the default is picked to be "hw:0,0", unless that device is provided by the loopback driver, in which case the default becomes "hw:1,0"

I can, with a reasonable ease, also provide a (temporary) way to change that default from the wireplumber config file.

For after HH, as we have agreed, the plan is to provide a full-fledged configuration to be able to change more or less everything that was configurable in 4A.
